
Spicy Fruit Paella

Ingredients:
- 2 tablespoons Olive Oil
- 2 cloves minced Garlic
- 1 chopped Onion
- 1 diced Bell Pepper
- 2 diced Ripe tomatoes
- 1 pinch Saffron Threads
- 1/2 teaspoon Hot Paprika
- 1 cup Short Grain Rice
- 2 cups Vegetable Broth
- 2 cups chopped Assorted Fruits (Apple, Banana, Mango etc.)
Instructions:
- Heat the olive oil in a skillet over medium heat.
- Add the garlic, onion, and bell pepper to the skillet and sauté for a few minutes until they begin to soften.
- Stir in the diced tomatoes, saffron, and hot paprika. Cook for another couple of minutes.
- Next, add the rice, coating it in the oil and spices.
- Pour in the vegetable broth and bring the mixture to a simmer.
- Allow it to cook until the rice is soft and has absorbed most of the broth, about 20 minutes.
- Near the end of the cooking time, add in the chopped fruits and stir to combine.
- Serve the paella hot, with optional garnish of chopped fresh herbs or a squeeze of lemon juice.
