Spicy Fruit Paella

Ingredients:

  • 2 tablespoons Olive Oil
  • 2 cloves minced Garlic
  • 1 chopped Onion
  • 1 diced Bell Pepper
  • 2 diced Ripe tomatoes
  • 1 pinch Saffron Threads
  • 1/2 teaspoon Hot Paprika
  • 1 cup Short Grain Rice
  • 2 cups Vegetable Broth
  • 2 cups chopped Assorted Fruits (Apple, Banana, Mango etc.)

Instructions:

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the garlic, onion, and bell pepper to the skillet and sauté for a few minutes until they begin to soften.
  3. Stir in the diced tomatoes, saffron, and hot paprika. Cook for another couple of minutes.
  4. Next, add the rice, coating it in the oil and spices.
  5. Pour in the vegetable broth and bring the mixture to a simmer.
  6. Allow it to cook until the rice is soft and has absorbed most of the broth, about 20 minutes.
  7. Near the end of the cooking time, add in the chopped fruits and stir to combine.
  8. Serve the paella hot, with optional garnish of chopped fresh herbs or a squeeze of lemon juice.
