Spicy Fruit Fried Rice

Ingredients:

  • 2 cups Long grain rice
  • 2 cups Mixed fruits (pineapple, apple, peach)
  • 2 cloves Garlic
  • 2 stalks Spring onions
  • 2 units Eggs
  • 3 tablespoons Soy sauce
  • 1 tablespoon Sesame oil
  • 1 teaspoon Red pepper flakes
  • to taste Salt
  • to taste Pepper

Instructions:

  1. Cook the rice according to package instructions, then set aside to cool.
  2. Chop the mixed fruits into small, bite-sized pieces. Also, mince the garlic and chop the spring onions.
  3. In a large pan or wok, heat the sesame oil over medium heat. Add the garlic and cook until fragrant.
  4. Add the eggs to the pan and scramble until cooked.
  5. Next, add the chopped fruits and cooked rice to the pan. Stir to combine.
  6. Add the soy sauce, red pepper flakes, salt and pepper. Stir well to ensure all the ingredients are evenly coated.
  7. Finally, garnish with the chopped spring onions. Serve hot.
