
Spicy Fruit Curry

Ingredients:
- 4 cups chopped Assorted fruits (apples, peaches, plums, cherries)
- 1 large, finely chopped Onion
- 2 inches fresh, grated Ginger
- 3 minced Garlic Cloves
- 2 chopped Jalapeno
- 2 tsp Curry powder
- 1 cup Coconut milk
- 1/4 cup finely chopped Cilantro
- 2 tbs Vegetable oil
- to taste Salt
- 1 cup Water
Instructions:
- In a large pan, heat oil over medium heat. Add chopped onion, ginger, garlic, and jalapenos, saute until onion turns translucent.
- Add the curry powder to the pan and continue to saute for a minute until the spices are fragrant.
- Add the chopped fruits to the pan along with salt. Stir well until all the ingredients are well combined.
- Pour the coconut milk and water into the pan. Cover and allow to simmer for 15 minutes, or until the fruits are cooked and soft.
- Remove from heat and garnish with cilantro. Serve hot with rice or bread.
