Spicy Fruit Curry

Ingredients:

  • 4 cups chopped Assorted fruits (apples, peaches, plums, cherries)
  • 1 large, finely chopped Onion
  • 2 inches fresh, grated Ginger
  • 3 minced Garlic Cloves
  • 2 chopped Jalapeno
  • 2 tsp Curry powder
  • 1 cup Coconut milk
  • 1/4 cup finely chopped Cilantro
  • 2 tbs Vegetable oil
  • to taste Salt
  • 1 cup Water

Instructions:

  1. In a large pan, heat oil over medium heat. Add chopped onion, ginger, garlic, and jalapenos, saute until onion turns translucent.
  2. Add the curry powder to the pan and continue to saute for a minute until the spices are fragrant.
  3. Add the chopped fruits to the pan along with salt. Stir well until all the ingredients are well combined.
  4. Pour the coconut milk and water into the pan. Cover and allow to simmer for 15 minutes, or until the fruits are cooked and soft.
  5. Remove from heat and garnish with cilantro. Serve hot with rice or bread.
