Spicy Fruit Caponata

Ingredients:
- 2 tablespoons Olive oil
- 1 piece, diced Apple
- 1 piece, diced Orange
- 1 piece, diced Pear
- 1 small, finely chopped Onion
- 2 minced Garlic cloves
- 1.5 cups Tomato sauce
- 3 tablespoons Balsamic vinegar
- 1 tablespoon Sugar
- To taste Crushed red pepper flakes
- A handful, chopped Fresh basil
- 2 tablespoons Constant Comment Tea
- To taste Salt
- To taste Black pepper
Instructions:
- Heat the olive oil over medium heat in a large sauté pan. Add the onion and garlic and sauté until the onions are translucent.
- Add the apple, orange, and pear and continue to sauté for about 5 minutes, until the fruits soften.
- Reduce heat and add the tomato sauce, balsamic vinegar, sugar, crushed red pepper flakes, and Constant Comment tea. Stir well.
- Simmer the mixture for about 20-30 minutes, until the fruits are tender and flavors have melded together.
- Season with salt, and black pepper. Stir in chopped fresh basil.
- Serve the caponata as a spicy snack on crostini, with a glass of chilled Prosecco. Enjoy!
