Spicy Fruit Caponata

Ingredients:

  • 2 tablespoons Olive oil
  • 1 piece, diced Apple
  • 1 piece, diced Orange
  • 1 piece, diced Pear
  • 1 small, finely chopped Onion
  • 2 minced Garlic cloves
  • 1.5 cups Tomato sauce
  • 3 tablespoons Balsamic vinegar
  • 1 tablespoon Sugar
  • To taste Crushed red pepper flakes
  • A handful, chopped Fresh basil
  • 2 tablespoons Constant Comment Tea
  • To taste Salt
  • To taste Black pepper

Instructions:

  1. Heat the olive oil over medium heat in a large sauté pan. Add the onion and garlic and sauté until the onions are translucent.
  2. Add the apple, orange, and pear and continue to sauté for about 5 minutes, until the fruits soften.
  3. Reduce heat and add the tomato sauce, balsamic vinegar, sugar, crushed red pepper flakes, and Constant Comment tea. Stir well.
  4. Simmer the mixture for about 20-30 minutes, until the fruits are tender and flavors have melded together.
  5. Season with salt, and black pepper. Stir in chopped fresh basil.
  6. Serve the caponata as a spicy snack on crostini, with a glass of chilled Prosecco. Enjoy!
