Ingredients:

  • 2 tablespoons olive oil
  • 3 cloves garlic
  • 1 medium onion
  • 4 medium tomatoes
  • 4 cups fish stock
  • 1 cup white wine
  • 0.5 teaspoon saffron threads
  • to taste cayenne pepper
  • 1.5 pounds mixed seafood
  • 2 tablespoons fresh parsley

Instructions:

  1. Heat the olive oil over medium heat in a large pot. Add chopped garlic and onions and cook until softened.
  2. Dice the tomatoes and add them to the pot, cooking until they are broken down.
  3. Add the fish stock, white wine, saffron threads, and cayenne pepper. Bring the mixture to a boil and then reduce heat and simmer for 30 minutes.
  4. Add the mixed seafood to the pot, ensuring everything is covered with the broth. Cook until the seafood is thoroughly cooked, approximately 10 minutes.
  5. Adjust the seasoning as needed. Be careful with the amount of cayenne pepper if you want to control the spiciness.
