Spicy French Roasted Chicken

Ingredients:

  • 1 piece Whole chicken
  • 2 teaspoons Paprika
  • 1 teaspoon Cayenne pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Dried thyme
  • to taste Salt
  • to taste Black pepper
  • 2 tablespoons Olive oil
  • 1 piece Lemon
  • 5 sprigs Fresh thyme
  • 6 piece Garlic cloves

Instructions:

  1. Preheat the oven to 375° F (190° C).
  2. In a small bowl, combine paprika, cayenne pepper, garlic powder, dried thyme, salt, black pepper.
  3. Pat the chicken dry with paper towels, then rub it all over with the olive oil. Sprinkle the spice mixture all over the chicken.
  4. Inside the chicken cavity, stuff the lemon (cut in half), fresh thyme sprigs, and garlic cloves.
  5. Place the chicken on a roasting rack in a roasting pan, breast side up.
  6. Roast the chicken in the preheated oven for approximately 1 hour and 30 minutes, or until the chicken is cooked through and the juices run clear.
  7. Let the chicken rest for 10 minutes before carving. Serve it hot.
