Spicy French Rice à la Diable

Ingredients:

  • 2 cups White Rice
  • 4 cups Chicken Broth
  • 2 tablespoons Olive Oil
  • 1 medium size, Onions
  • 3 Garlic Cloves
  • 1 can Diced Tomatoes
  • to taste Red Pepper Flakes
  • to taste Salt
  • to taste Black Pepper
  • 4 Eggs
  • 1 cup Cheddar Cheese

Instructions:

  1. In a large pot, bring chicken broth to a boil. Add rice, reduce heat to low and let it simmer until rice is fully cooked.
  2. In a separate pan, add olive oil and heat over medium heat. Then add sliced onions and minced garlic. Sauté until onions are translucent.
  3. Add diced tomatoes to the pan along with the red pepper flakes, salt, and black pepper. Stir to combine.
  4. In a separate pan over medium heat, crack each egg into the pan, allowing space for each one. Cook until the whites are set but the yolks are still runny.
  5. Add the cooked rice to the pan with the tomato mixture, stirring to combine. Sprinkle the Cheddar cheese on top and allow it to melt.
  6. Once the cheese has melted, top it with the eggs. Serve your Spicy French Rice à la Diable hot and enjoy!
