
Spicy French Rice à la Diable

Ingredients:
- 2 cups White Rice
- 4 cups Chicken Broth
- 2 tablespoons Olive Oil
- 1 medium size, Onions
- 3 Garlic Cloves
- 1 can Diced Tomatoes
- to taste Red Pepper Flakes
- to taste Salt
- to taste Black Pepper
- 4 Eggs
- 1 cup Cheddar Cheese
Instructions:
- In a large pot, bring chicken broth to a boil. Add rice, reduce heat to low and let it simmer until rice is fully cooked.
- In a separate pan, add olive oil and heat over medium heat. Then add sliced onions and minced garlic. Sauté until onions are translucent.
- Add diced tomatoes to the pan along with the red pepper flakes, salt, and black pepper. Stir to combine.
- In a separate pan over medium heat, crack each egg into the pan, allowing space for each one. Cook until the whites are set but the yolks are still runny.
- Add the cooked rice to the pan with the tomato mixture, stirring to combine. Sprinkle the Cheddar cheese on top and allow it to melt.
- Once the cheese has melted, top it with the eggs. Serve your Spicy French Rice à la Diable hot and enjoy!
