Spicy French Ratatouille Pasta

Ingredients:

  • 2 tablespoons Olive oil
  • 1 large Onion
  • 3 cloves Garlic
  • 1 Red bell pepper
  • 1 small Eggplant
  • 1 large Zucchini
  • 3 large Tomatoes
  • 1/2 teaspoon Crushed red pepper flakes
  • to taste Salt
  • 500 grams Penne pasta
  • a bunch Fresh basil
  • to taste Parmesan cheese

Instructions:

  1. In a large pot of boiling salted water, cook pasta according to package instructions. Drain well.
  2. While the pasta is cooking, heat olive oil in a large frying pan over medium heat.
  3. Add onions, red bell pepper, zucchini, and eggplant to the pan. Saute until they start to get tender and the onions become translucent.
  4. Add tomatoes, garlic and red pepper flakes to the pan. Continue to saute until the tomatoes break down and the mixture becomes a chunky sauce.
  5. Season with salt and adjust the seasoning according to your taste.
  6. Toss the cooked pasta in with the vegetables until everything is well coated.
  7. Garnish with fresh basil leaves and grated parmesan on top before serving.
