
Spicy French Ratatouille Pasta

Ingredients:
- 2 tablespoons Olive oil
- 1 large Onion
- 3 cloves Garlic
- 1 Red bell pepper
- 1 small Eggplant
- 1 large Zucchini
- 3 large Tomatoes
- 1/2 teaspoon Crushed red pepper flakes
- to taste Salt
- 500 grams Penne pasta
- a bunch Fresh basil
- to taste Parmesan cheese
Instructions:
- In a large pot of boiling salted water, cook pasta according to package instructions. Drain well.
- While the pasta is cooking, heat olive oil in a large frying pan over medium heat.
- Add onions, red bell pepper, zucchini, and eggplant to the pan. Saute until they start to get tender and the onions become translucent.
- Add tomatoes, garlic and red pepper flakes to the pan. Continue to saute until the tomatoes break down and the mixture becomes a chunky sauce.
- Season with salt and adjust the seasoning according to your taste.
- Toss the cooked pasta in with the vegetables until everything is well coated.
- Garnish with fresh basil leaves and grated parmesan on top before serving.
