Spicy French Ratatouille

Ingredients:

  • 1 whole eggplant
  • 2 whole zucchini
  • 1 whole red bell pepper
  • 1 whole yellow bell pepper
  • 4 whole tomatoes
  • 4 cloves garlic cloves
  • 2 tablespoons olive oil
  • 1 leaf bay leaf
  • 1 sprig fresh thyme
  • 1/2 teaspoon red pepper flakes
  • to taste salt
  • to taste pepper

Instructions:

  1. 1. Cut eggplant and zucchini into bite-sized pieces. Cut the peppers into strips and the tomatoes into eights.
  2. 2. Crush the garlic cloves and chop finely.
  3. 3. Heat olive oil in a large pan. Add the eggplant and zucchini, cook for 10 minutes until browned.
  4. 4. Add the peppers, garlic, and tomatoes into the pan. Sprinkle in the red pepper flakes.
  5. 5. Stir in the bay leaf, thyme, salt, and pepper.
  6. 6. Cover the pan, lower the heat and let it simmer for 30 minutes, stirring occasionally.
  7. 7. After 30 minutes, remove the bay leaf and thyme sprig. Adjust seasoning if needed
  8. 8. Serve hot, either as a main dish or side dish.
