
Spicy French Ratatouille

Ingredients:
- 1 whole eggplant
- 2 whole zucchini
- 1 whole red bell pepper
- 1 whole yellow bell pepper
- 4 whole tomatoes
- 4 cloves garlic cloves
- 2 tablespoons olive oil
- 1 leaf bay leaf
- 1 sprig fresh thyme
- 1/2 teaspoon red pepper flakes
- to taste salt
- to taste pepper
Instructions:
- 1. Cut eggplant and zucchini into bite-sized pieces. Cut the peppers into strips and the tomatoes into eights.
- 2. Crush the garlic cloves and chop finely.
- 3. Heat olive oil in a large pan. Add the eggplant and zucchini, cook for 10 minutes until browned.
- 4. Add the peppers, garlic, and tomatoes into the pan. Sprinkle in the red pepper flakes.
- 5. Stir in the bay leaf, thyme, salt, and pepper.
- 6. Cover the pan, lower the heat and let it simmer for 30 minutes, stirring occasionally.
- 7. After 30 minutes, remove the bay leaf and thyme sprig. Adjust seasoning if needed
- 8. Serve hot, either as a main dish or side dish.
