Spicy French Pork Cassoulet

Ingredients:

  • 350 grams Pork loin
  • 1 can Cannellini beans
  • 1 medium Onion
  • 2 Garlic cloves
  • 5 Fresh thyme sprigs
  • 300 ml Chicken stock
  • 2 tablespoons Sundried tomato paste
  • 1 teaspoon Hot chilli powder
  • 2 tablespoons Olive oil
  • to taste Salt and pepper

Instructions:

  1. Slice the pork loin into thin strips. Season with salt, pepper and the chilli powder. Set aside.
  2. Heat the olive oil in a pan over medium heat. Add the thinly sliced onion and minced garlic and saute until tender and slightly golden.
  3. Add the pork strips to the pan and cook until browned on all sides.
  4. Stir in the sundried tomato paste and the picked thyme leaves. Cook for another minute until fragrant.
  5. Pour in the chicken stock and bring to a simmer. Reduce the heat and let it simmer for 10 minutes.
  6. Drain and rinse the cannellini beans and add them to the pan. Stir well and let it simmer for another 5 minutes.
  7. Check seasoning and add more salt or pepper if necessary. Serve hot with crusty French bread and enjoy your spicy French pork cassoulet!
