
Spicy French Pork Cassoulet

Ingredients:
- 350 grams Pork loin
- 1 can Cannellini beans
- 1 medium Onion
- 2 Garlic cloves
- 5 Fresh thyme sprigs
- 300 ml Chicken stock
- 2 tablespoons Sundried tomato paste
- 1 teaspoon Hot chilli powder
- 2 tablespoons Olive oil
- to taste Salt and pepper
Instructions:
- Slice the pork loin into thin strips. Season with salt, pepper and the chilli powder. Set aside.
- Heat the olive oil in a pan over medium heat. Add the thinly sliced onion and minced garlic and saute until tender and slightly golden.
- Add the pork strips to the pan and cook until browned on all sides.
- Stir in the sundried tomato paste and the picked thyme leaves. Cook for another minute until fragrant.
- Pour in the chicken stock and bring to a simmer. Reduce the heat and let it simmer for 10 minutes.
- Drain and rinse the cannellini beans and add them to the pan. Stir well and let it simmer for another 5 minutes.
- Check seasoning and add more salt or pepper if necessary. Serve hot with crusty French bread and enjoy your spicy French pork cassoulet!
