
Spicy French Jambalaya

Ingredients:
- 1 cup Basmati rice
- 2 tablespoons Olive oil
- 1 cup Onion, diced
- 1 cup Bell pepper, diced
- 2 cloves Garlic cloves, minced
- 1 cup Andouille sausage, sliced
- 1 cup Chicken breasts, diced
- 1 can Crushed tomatoes
- 1.5 cups Chicken broth
- 1 tablespoon Cajun seasoning
- To taste Salt and pepper
- To taste Hot sauce
- 2 tablespoons Scallions, chopped
Instructions:
- Heat the oil over medium heat and cook the onion, bell pepper, and garlic until softened.
- Add the sausage and chicken, and cook until browned.
- Stir in the rice, tomatoes, broth, Cajun seasoning, salt, and pepper. Bring to a boil, then reduce to a simmer.
- Cover and let cook for 20-25 minutes until rice is tender.
- Add the hot sauce and adjust seasonings to taste.
- Dish out and garnish with scallions before serving.
