Spicy French Jambalaya

Ingredients:

  • 1 cup Basmati rice
  • 2 tablespoons Olive oil
  • 1 cup Onion, diced
  • 1 cup Bell pepper, diced
  • 2 cloves Garlic cloves, minced
  • 1 cup Andouille sausage, sliced
  • 1 cup Chicken breasts, diced
  • 1 can Crushed tomatoes
  • 1.5 cups Chicken broth
  • 1 tablespoon Cajun seasoning
  • To taste Salt and pepper
  • To taste Hot sauce
  • 2 tablespoons Scallions, chopped

Instructions:

  1. Heat the oil over medium heat and cook the onion, bell pepper, and garlic until softened.
  2. Add the sausage and chicken, and cook until browned.
  3. Stir in the rice, tomatoes, broth, Cajun seasoning, salt, and pepper. Bring to a boil, then reduce to a simmer.
  4. Cover and let cook for 20-25 minutes until rice is tender.
  5. Add the hot sauce and adjust seasonings to taste.
  6. Dish out and garnish with scallions before serving.
