Spicy French Fish Stew

Ingredients:

  • 4 pieces White Fish Fillets (like Cod or Halibut)
  • 2 tbsp Olive Oil
  • 2 medium Onions, finely chopped
  • 3 cloves Garlic Cloves, minced
  • 1 tsp Red Chilli Flakes
  • 400 grams Chopped Tomatoes
  • 250 ml White Wine
  • 500 ml Fish Stock
  • 1 tsp Orange Zest
  • 3 tbsp Fresh Parsley, chopped
  • to taste Salt and Pepper

Instructions:

  1. Heat the olive oil in a large pan over medium heat, add the onions and cook until soft.
  2. Add the garlic and chilli flakes, cook for another minute.
  3. Pour in the chopped tomatoes, white wine, fish stock, and orange zest. Bring to a boil, then lower the heat and simmer for 15 minutes.
  4. Season the fish fillets with salt and pepper and add to the pan. Cook for around 10 minutes, or until the fish is cooked through.
  5. Serve the stew hot, garnished with fresh parsley.
