
Spicy French Fish Cassoulet

Ingredients:
- 4 pieces white fish fillets
- 1 can cannellini beans
- 1 can chopped tomatoes
- 2 pieces red chilies
- 2 pieces garlic cloves
- 2 tablespoons fresh parsley
- 2 tablespoons olive oil
- to taste salt
- to taste black pepper
Instructions:
- The first step is to preheat your oven to 200 degrees C (180 degrees C for fan ovens).
- Drizzle the olive oil over the fish fillets and season with salt and pepper. Place them in the oven and roast for 15 minutes.
- While the fish is cooking, heat a pan over medium heat. Add in the chopped garlic and red chilies. Cook until fragrant.
- Add the cannellini beans and chopped tomatoes to the pan. Season with salt and pepper and stir well. Let it simmer for 10 minutes to let the flavors infuse.
- After the fish is done cooking, add it to the pan with the beans and tomatoes. Let it cook for another 15 minutes.
- The final step is to garnish with fresh parsley before serving.
