Spicy French Fish Cassoulet

Ingredients:

  • 4 pieces white fish fillets
  • 1 can cannellini beans
  • 1 can chopped tomatoes
  • 2 pieces red chilies
  • 2 pieces garlic cloves
  • 2 tablespoons fresh parsley
  • 2 tablespoons olive oil
  • to taste salt
  • to taste black pepper

Instructions:

  1. The first step is to preheat your oven to 200 degrees C (180 degrees C for fan ovens).
  2. Drizzle the olive oil over the fish fillets and season with salt and pepper. Place them in the oven and roast for 15 minutes.
  3. While the fish is cooking, heat a pan over medium heat. Add in the chopped garlic and red chilies. Cook until fragrant.
  4. Add the cannellini beans and chopped tomatoes to the pan. Season with salt and pepper and stir well. Let it simmer for 10 minutes to let the flavors infuse.
  5. After the fish is done cooking, add it to the pan with the beans and tomatoes. Let it cook for another 15 minutes.
  6. The final step is to garnish with fresh parsley before serving.
