Spicy French Chicken Casserole

Ingredients:

  • 8 pieces Chicken thighs
  • 2 tablespoons Olive oil
  • 1 large Yellow onion
  • 2 large Garlic cloves
  • 1 cup Red wine
  • 2 teaspoons Chilli flakes
  • 2 tablespoons Tomato paste
  • 1 can Crushed tomatoes
  • 4 sprigs Thyme sprigs
  • 2 leaves Bay leaves
  • to taste Salt
  • to taste Pepper

Instructions:

  1. Preheat your oven to 180°C/350°F.
  2. In a large frying pan heat the olive oil over medium-high heat. Add the chicken thighs, season with salt and pepper, sear until golden brown.
  3. Remove chicken from the pan and set aside.
  4. In the same pan, add the chopped onion, minced garlic, and chilli flakes. Cook until the onion is translucent.
  5. Add the tomato paste, crushed tomatoes, and red wine. Stir until everything is mixed together.
  6. Place the seared chicken back into the pan. Add in the thyme sprigs and bay leaves.
  7. Cover the pan with a lid and place it in the oven. Cook for 1 hour.
  8. After 1 hour, remove the pan from the oven. Let it cool for a few minutes before serving.
