Spicy French Chicken Casserole

Ingredients:
- 8 pieces Chicken thighs
- 2 tablespoons Olive oil
- 1 large Yellow onion
- 2 large Garlic cloves
- 1 cup Red wine
- 2 teaspoons Chilli flakes
- 2 tablespoons Tomato paste
- 1 can Crushed tomatoes
- 4 sprigs Thyme sprigs
- 2 leaves Bay leaves
- to taste Salt
- to taste Pepper
Instructions:
- Preheat your oven to 180°C/350°F.
- In a large frying pan heat the olive oil over medium-high heat. Add the chicken thighs, season with salt and pepper, sear until golden brown.
- Remove chicken from the pan and set aside.
- In the same pan, add the chopped onion, minced garlic, and chilli flakes. Cook until the onion is translucent.
- Add the tomato paste, crushed tomatoes, and red wine. Stir until everything is mixed together.
- Place the seared chicken back into the pan. Add in the thyme sprigs and bay leaves.
- Cover the pan with a lid and place it in the oven. Cook for 1 hour.
- After 1 hour, remove the pan from the oven. Let it cool for a few minutes before serving.
