Spicy French Bouillabaisse

Ingredients:

  • 2 tablespoons olive oil
  • 3 cloves garlic
  • 1 large onion
  • 2 celery stalks
  • 4 large tomatoes
  • 1 liter fish stock
  • a pinch saffron threads
  • to taste cayenne pepper
  • 1.5 kilograms mixed seafood
  • 1 loaf baguette
  • as needed rouille sauce

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the garlic, onion, and celery and saute until softened.
  2. Add the tomatoes, fish stock, saffron, and cayenne pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.
  3. Add the mixed seafood to the pot and simmer for another 15-20 minutes, or until the seafood is fully cooked.
  4. While the soup is cooking, slice the baguette and spread each slice with rouille sauce.
  5. To serve, ladle the soup into bowls and place a slice of rouille toast on top. Enjoy!
