
Spicy French Bouillabaisse

Ingredients:
- 2 tablespoons olive oil
- 3 cloves garlic
- 1 large onion
- 2 celery stalks
- 4 large tomatoes
- 1 liter fish stock
- a pinch saffron threads
- to taste cayenne pepper
- 1.5 kilograms mixed seafood
- 1 loaf baguette
- as needed rouille sauce
Instructions:
- Heat the olive oil in a large pot over medium heat. Add the garlic, onion, and celery and saute until softened.
- Add the tomatoes, fish stock, saffron, and cayenne pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.
- Add the mixed seafood to the pot and simmer for another 15-20 minutes, or until the seafood is fully cooked.
- While the soup is cooking, slice the baguette and spread each slice with rouille sauce.
- To serve, ladle the soup into bowls and place a slice of rouille toast on top. Enjoy!
