Spicy French Beef Bourguignon

Ingredients:
- 4 strips Bacon slices
- 1 pound Beef chuck
- 2 cups Red wine
- 1 unit Onion
- 6 units Garlic cloves
- 2 units Carrots
- 2 teaspoons Red chili flakes
- 2 cups Beef broth
- 1 cup Mushrooms
- to taste unit Salt and pepper
- 2 sprigs Fresh thyme
Instructions:
- In a large pan, cook the bacon until crispy. Remove the bacon and set aside, but leave the fat in the pan.
- Season the beef with salt, pepper and chili flakes. Add it to the pan and cook until browned on all sides. Remove the beef and set aside
- In the same pan, add the onions, garlic, and carrots. Cook until softened
- Pour in red wine, stirring well, scraping off any bits stuck to the bottom of the pan
- Return the beef and bacon to the pan, add beef broth, mushrooms, and thyme. Bring to a simmer
- Transfer everything to a pot, cover it and let it simmer for about 2 hours
- Check the beef after 2 hours, it should be tender and the flavors should be well combined. Adjust the salt and pepper if necessary
- Serve hot with a side of crusty bread or over mashed potatoes
