Spicy Chinese Seafood Congee

Ingredients:

  • 1 cup Rice
  • 8 cups Water
  • 500 grams Mixed Seafood (mussels, prawns, scallops)
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Sesame Oil
  • 2 stalks Spring Onions
  • 2 cloves Garlic Cloves
  • 1 inch piece Ginger
  • 2 peppers Red chili peppers
  • to taste Salt

Instructions:

  1. 1. Rinse the rice under cold water until the water runs clear. Then, soak the rice in clean water for about 20 minutes.
  2. 2. In a large pot, add water, soaked rice, crushed garlic cloves, and sliced ginger. Bring it to a boil.
  3. 3. Reduce the heat to low and let it simmer for about an hour until the rice has cooked and thickened to a porridge-like consistency.
  4. 4. Add the seafood to the pot. Cook for about 5 minutes until the seafood is fully cooked.
  5. 5. Add the soy sauce, sesame oil, and salt. Mix well.
  6. 6. Add the spring onions and chili peppers. At this point, you can adjust the taste according to your preference.
  7. 7. Remove the pot from heat. Let it sit for about 5 minutes before serving. Enjoy your spicy Chinese seafood congee!
