Spicy Chinese Seafood Congee

Ingredients:
- 1 cup Rice
- 8 cups Water
- 500 grams Mixed Seafood (mussels, prawns, scallops)
- 2 tablespoons Soy Sauce
- 1 tablespoon Sesame Oil
- 2 stalks Spring Onions
- 2 cloves Garlic Cloves
- 1 inch piece Ginger
- 2 peppers Red chili peppers
- to taste Salt
Instructions:
- 1. Rinse the rice under cold water until the water runs clear. Then, soak the rice in clean water for about 20 minutes.
- 2. In a large pot, add water, soaked rice, crushed garlic cloves, and sliced ginger. Bring it to a boil.
- 3. Reduce the heat to low and let it simmer for about an hour until the rice has cooked and thickened to a porridge-like consistency.
- 4. Add the seafood to the pot. Cook for about 5 minutes until the seafood is fully cooked.
- 5. Add the soy sauce, sesame oil, and salt. Mix well.
- 6. Add the spring onions and chili peppers. At this point, you can adjust the taste according to your preference.
- 7. Remove the pot from heat. Let it sit for about 5 minutes before serving. Enjoy your spicy Chinese seafood congee!
