Spicy Chinese Scrambled Eggs

Ingredients:

  • 6 units Eggs
  • 2 units Spring onions
  • 2 cloves Garlic
  • 2 tablespoons Soy sauce
  • 2 teaspoons Sesame oil
  • 2 units Red chili peppers
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Pepper

Instructions:

  1. Crack open the eggs in a bowl, add a pinch of salt and pepper then beat until fully mixed.
  2. Thinly slice the spring onions, garlic, and chili peppers.
  3. Heat the sesame oil in a frypan over medium heat, add the garlic and chili peppers and stir-fry until aromatic.
  4. Pour the beaten eggs into the frypan. Let it sit for a while until the edges start to set, then stir gently with a spatula to form large, soft curds.
  5. When the eggs are mostly cooked but still slightly runny in the middle, add the soy sauce and stir-fry for another minute.
  6. Remove from heat and sprinkle with sliced spring onions. Serve hot.
