
Spicy Chinese Scrambled Eggs

Ingredients:
- 6 units Eggs
- 2 units Spring onions
- 2 cloves Garlic
- 2 tablespoons Soy sauce
- 2 teaspoons Sesame oil
- 2 units Red chili peppers
- 0.5 teaspoon Salt
- 0.5 teaspoon Pepper
Instructions:
- Crack open the eggs in a bowl, add a pinch of salt and pepper then beat until fully mixed.
- Thinly slice the spring onions, garlic, and chili peppers.
- Heat the sesame oil in a frypan over medium heat, add the garlic and chili peppers and stir-fry until aromatic.
- Pour the beaten eggs into the frypan. Let it sit for a while until the edges start to set, then stir gently with a spatula to form large, soft curds.
- When the eggs are mostly cooked but still slightly runny in the middle, add the soy sauce and stir-fry for another minute.
- Remove from heat and sprinkle with sliced spring onions. Serve hot.
