Spicy Chinese Morning Noodles

Ingredients:

  • 200 grams Egg noodles
  • 2 tablespoon Sesame oil
  • 2 cloves Garlic
  • 1 inch Ginger
  • 1 piece Red chilli
  • 3 stalks Spring onions
  • 2 tablespoon Soy Sauce
  • 1 tablespoon Vinegar
  • 1 teaspoon Sugar
  • 2 pieces Eggs

Instructions:

  1. Boil the noodles as per the instructions on the packet and keep them aside.
  2. Heat the sesame oil in a wok or frying pan.
  3. Add finely chopped garlic and ginger to the pan and stir-fry for about a minute until fragrant.
  4. Slice the red chilli and spring onions and add them to the pan. Continue to stir-fry for another minute.
  5. In a small bowl, mix the soy sauce, vinegar and sugar. Pour this mix into the pan and stir well to combine.
  6. Push the veggies to the side of the pan and crack the eggs into the pan. Stir quickly to scramble them.
  7. Add the cooked noodles to the pan and mix well so that the noodles are coated with the sauce and mixed with the veggies and eggs.
  8. Serve hot for a spicy start to the day!
