
Spicy Chinese Morning Noodles

Ingredients:
- 200 grams Egg noodles
- 2 tablespoon Sesame oil
- 2 cloves Garlic
- 1 inch Ginger
- 1 piece Red chilli
- 3 stalks Spring onions
- 2 tablespoon Soy Sauce
- 1 tablespoon Vinegar
- 1 teaspoon Sugar
- 2 pieces Eggs
Instructions:
- Boil the noodles as per the instructions on the packet and keep them aside.
- Heat the sesame oil in a wok or frying pan.
- Add finely chopped garlic and ginger to the pan and stir-fry for about a minute until fragrant.
- Slice the red chilli and spring onions and add them to the pan. Continue to stir-fry for another minute.
- In a small bowl, mix the soy sauce, vinegar and sugar. Pour this mix into the pan and stir well to combine.
- Push the veggies to the side of the pan and crack the eggs into the pan. Stir quickly to scramble them.
- Add the cooked noodles to the pan and mix well so that the noodles are coated with the sauce and mixed with the veggies and eggs.
- Serve hot for a spicy start to the day!
