
Spicy Chinese Midnight Chicken Stir-fry

Ingredients:
- 500 grams Boneless Chicken
- 2 tablespoons Soy Sauce
- 2 tablespoons Hot Chilli Sauce
- 2 cloves Garlic
- 1 inch piece Ginger
- 1 cup Mixed Bell Peppers
- 2 stalks Spring Onions
- 2 tablespoons Olive Oil
- 1 tablespoon Cornstarch
- 4 tablespoons Water
- to taste Salt
- to taste Pepper
Instructions:
- Cut the chicken into small strips or cubes and marinate in a mixture of soy sauce and chilli sauce. Set aside for 15 minutes.
- Mince the garlic and ginger finely. Slice the bell peppers and spring onions into thin strips.
- In a large pan or wok, heat the olive oil over medium heat. Add the minced garlic and ginger, and sauté till fragrant.
- Add the marinated chicken to the pan, stir fry until it is nearly cooked through.
- Add the bell peppers, spring onions, salt, and pepper. Stir fry until the vegetables are tender-crisp.
- Dissolve the cornstarch in water and add to the pan. Stir well until the sauce thickens.
- Serve hot with steamed rice or noodles, garnished with additional spring onions on top. Enjoy your midnight craving!
