Spicy Chinese Midnight Chicken Stir-fry

Ingredients:

  • 500 grams Boneless Chicken
  • 2 tablespoons Soy Sauce
  • 2 tablespoons Hot Chilli Sauce
  • 2 cloves Garlic
  • 1 inch piece Ginger
  • 1 cup Mixed Bell Peppers
  • 2 stalks Spring Onions
  • 2 tablespoons Olive Oil
  • 1 tablespoon Cornstarch
  • 4 tablespoons Water
  • to taste Salt
  • to taste Pepper

Instructions:

  1. Cut the chicken into small strips or cubes and marinate in a mixture of soy sauce and chilli sauce. Set aside for 15 minutes.
  2. Mince the garlic and ginger finely. Slice the bell peppers and spring onions into thin strips.
  3. In a large pan or wok, heat the olive oil over medium heat. Add the minced garlic and ginger, and sauté till fragrant.
  4. Add the marinated chicken to the pan, stir fry until it is nearly cooked through.
  5. Add the bell peppers, spring onions, salt, and pepper. Stir fry until the vegetables are tender-crisp.
  6. Dissolve the cornstarch in water and add to the pan. Stir well until the sauce thickens.
  7. Serve hot with steamed rice or noodles, garnished with additional spring onions on top. Enjoy your midnight craving!
