
Spicy Chinese Breakfast Noodles

Ingredients:
- 150 grams Dried Chinese Noodles
- 2 tablespoons Sesame Oil
- 2 cloves Garlic
- 1 inch piece Ginger
- 3 stems Spring Onions
- 2 tablespoons Soy Sauce
- 1 tablespoon Sriracha
- 2 Eggs
Instructions:
- Boil the noodles according to package instructions, then drain and rinse under cold water. Drizzle with a bit of sesame oil to prevent sticking.
- Mince the garlic and ginger. Slice the spring onions, separating the white and green parts.
- In a pan over medium heat, pour in the remaining sesame oil. Add the ginger, garlic, and white parts of the spring onions. Stir-fry for 1-2 minutes, until aromatic.
- Add the cooked noodles to the pan, along with the soy sauce and sriracha. Toss until the noodles are well-coated in the sauce.
- Push the noodles to one side of the pan. On the empty side, crack the eggs and scramble them. Once cooked, mix into the noodles.
- Garnish the noodles with the green parts of the spring onions before serving. Add extra sriracha if you prefer more heat.
