Spicy Chinese Breakfast Noodles

Ingredients:

  • 150 grams Dried Chinese Noodles
  • 2 tablespoons Sesame Oil
  • 2 cloves Garlic
  • 1 inch piece Ginger
  • 3 stems Spring Onions
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Sriracha
  • 2 Eggs

Instructions:

  1. Boil the noodles according to package instructions, then drain and rinse under cold water. Drizzle with a bit of sesame oil to prevent sticking.
  2. Mince the garlic and ginger. Slice the spring onions, separating the white and green parts.
  3. In a pan over medium heat, pour in the remaining sesame oil. Add the ginger, garlic, and white parts of the spring onions. Stir-fry for 1-2 minutes, until aromatic.
  4. Add the cooked noodles to the pan, along with the soy sauce and sriracha. Toss until the noodles are well-coated in the sauce.
  5. Push the noodles to one side of the pan. On the empty side, crack the eggs and scramble them. Once cooked, mix into the noodles.
  6. Garnish the noodles with the green parts of the spring onions before serving. Add extra sriracha if you prefer more heat.
