
Spicy Chinese Breakfast Fried Rice

Ingredients:
- 2 cups Rice
- 2 tablespoons Vegetable oil
- 2 cloves Garlic, minced
- 2 pieces Red chili peppers, finely chopped
- 4 pieces Scallions, whites and greens separated, finely chopped
- 4 pieces Eggs, lightly beaten
- 2 tablespoons Soy sauce
- 1 tablespoon Sesame oil
Instructions:
- Cook rice according to package instructions. Once rice is done, fluff it with a fork and let it cool down.
- Heat 1 tablespoon of the vegetable oil in a large wok or non-stick skillet over medium-high heat.
- Add the garlic and red chili peppers and sauté for about 1 minute or until fragrant.
- Add the scallion whites and stir-fry for about 2 minutes.
- Push everything to the side of the wok or skillet. Add the remaining tablespoon of oil and pour in the eggs. Scramble the eggs briefly then mix them with the garlic, chilies, and scallions.
- Add the cooked rice to the wok or skillet, breaking up any big chunks. Stir everything together for about a minute to heat the rice through.
- Pour in the soy sauce and sesame oil. Stir to distribute the sauces evenly. Cook for another 2-3 minutes ensuring that the rice gets a little toasted.
- Top with the scallion greens and serve hot.
