Spicy Chicken Enchiladas

Ingredients:

  • 2 pieces Chicken breasts
  • 2 cups Enchilada sauce
  • 1 can Chopped green chili peppers
  • 2 cups shredded Cheese
  • 8 pieces Tortillas
  • 1 chopped Onions
  • 2 cloves Garlic
  • to taste Salt
  • to taste Pepper

Instructions:

  1. Preheat the oven to 375 degrees F.
  2. In a skillet, cook chicken until no longer pink. Shred it and set aside.
  3. In the same skillet, saute onions and garlic until soft.
  4. Add the shredded chicken back into the skillet. Stir in chopped green chilies, salt, and pepper.
  5. Pour half of the enchilada sauce into the bottom of a baking dish.
  6. Fill each tortilla with the chicken mixture and a sprinkling of cheese, roll it up, and place it seam-side down in the baking dish.
  7. Pour the remaining enchilada sauce over the top of the enchiladas. Sprinkle with the remaining cheese.
  8. Bake for 20-25 minutes, until the cheese is bubbly and beginning to brown.
  9. Allow it to cool for a few minutes before serving. Enjoy your Spicy Chicken Enchiladas.
