
Spicy Chicken Enchiladas

Ingredients:
- 2 pieces Chicken breasts
- 2 cups Enchilada sauce
- 1 can Chopped green chili peppers
- 2 cups shredded Cheese
- 8 pieces Tortillas
- 1 chopped Onions
- 2 cloves Garlic
- to taste Salt
- to taste Pepper
Instructions:
- Preheat the oven to 375 degrees F.
- In a skillet, cook chicken until no longer pink. Shred it and set aside.
- In the same skillet, saute onions and garlic until soft.
- Add the shredded chicken back into the skillet. Stir in chopped green chilies, salt, and pepper.
- Pour half of the enchilada sauce into the bottom of a baking dish.
- Fill each tortilla with the chicken mixture and a sprinkling of cheese, roll it up, and place it seam-side down in the baking dish.
- Pour the remaining enchilada sauce over the top of the enchiladas. Sprinkle with the remaining cheese.
- Bake for 20-25 minutes, until the cheese is bubbly and beginning to brown.
- Allow it to cool for a few minutes before serving. Enjoy your Spicy Chicken Enchiladas.
