
Spicy Chicken Breakfast Skillet

Ingredients:
- 2 pieces boneless, skinless chicken breasts
- 2 tablespoons extra virgin olive oil
- 1 piece red bell pepper
- 1 piece yellow onion
- 2 pieces garlic cloves
- 2 tablespoons sliced jalapenos
- 1/2 teaspoon dried oregano
- 1 teaspoon smoked paprika
- 4 pieces eggs
Instructions:
- Cut the chicken into bite-sized pieces. Marinate with salt, pepper, and a tablespoon of olive oil.
- Heat a skillet over medium heat. Add the remaining olive oil.
- Add the chicken to the skillet and cook until fully cooked and golden brown. Remove the chicken from the skillet and set aside.
- In the same skillet, add the diced red bell pepper and onion. Saute until they start to become soft.
- Add the garlic, jalapenos, dried oregano, and smoked paprika to the skillet. Saute until all the ingredients are well combined and fragrant.
- Return the chicken to the skillet and stir to combine with the pepper and onion mixture.
- Crack the eggs over the chicken and vegetable mixture in the skillet. Cover the skillet and cook until the eggs are cooked to your liking.
- Serve the Spicy Chicken Breakfast Skillet immediately, garnished with fresh herbs like cilantro or parsley if desired.
