Spicy Chicken Breakfast Skillet

Ingredients:

  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons extra virgin olive oil
  • 1 piece red bell pepper
  • 1 piece yellow onion
  • 2 pieces garlic cloves
  • 2 tablespoons sliced jalapenos
  • 1/2 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 4 pieces eggs

Instructions:

  1. Cut the chicken into bite-sized pieces. Marinate with salt, pepper, and a tablespoon of olive oil.
  2. Heat a skillet over medium heat. Add the remaining olive oil.
  3. Add the chicken to the skillet and cook until fully cooked and golden brown. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the diced red bell pepper and onion. Saute until they start to become soft.
  5. Add the garlic, jalapenos, dried oregano, and smoked paprika to the skillet. Saute until all the ingredients are well combined and fragrant.
  6. Return the chicken to the skillet and stir to combine with the pepper and onion mixture.
  7. Crack the eggs over the chicken and vegetable mixture in the skillet. Cover the skillet and cook until the eggs are cooked to your liking.
  8. Serve the Spicy Chicken Breakfast Skillet immediately, garnished with fresh herbs like cilantro or parsley if desired.
