Spicy Cajun Chicken and Rice

Ingredients:

  • 1 cup Long-grain white rice
  • 2 pieces Boneless, skinless chicken breasts
  • 2 tablespoons Olive oil
  • 2 tablespoons Cajun seasoning
  • 1 cup Diced onion
  • 1 cup Diced bell peppers
  • 2 cloves Garlic cloves, minced
  • 2 cups Chicken broth
  • 1 can Canned diced tomatoes
  • 1 tablespoon Fresh chopped parsley
  • To taste Salt

Instructions:

  1. Season chicken with 1 tablespoon Cajun seasoning.
  2. Heat olive oil in a large pan over medium heat. Add chicken and cook until no longer pink. Remove chicken and set aside.
  3. In the same pan, add onions, peppers, and remaining Cajun seasoning. Cook until vegetables are soft.
  4. Add garlic to pan and saute for 30 seconds.
  5. Add tomatoes, chicken broth, and rice to pan. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until rice is cooked.
  6. Add chicken back into the pan and stir to combine.
  7. Season with salt and sprinkle with chopped parsley before serving.
