
Spicy Cajun Chicken and Rice

Ingredients:
- 1 cup Long-grain white rice
- 2 pieces Boneless, skinless chicken breasts
- 2 tablespoons Olive oil
- 2 tablespoons Cajun seasoning
- 1 cup Diced onion
- 1 cup Diced bell peppers
- 2 cloves Garlic cloves, minced
- 2 cups Chicken broth
- 1 can Canned diced tomatoes
- 1 tablespoon Fresh chopped parsley
- To taste Salt
Instructions:
- Season chicken with 1 tablespoon Cajun seasoning.
- Heat olive oil in a large pan over medium heat. Add chicken and cook until no longer pink. Remove chicken and set aside.
- In the same pan, add onions, peppers, and remaining Cajun seasoning. Cook until vegetables are soft.
- Add garlic to pan and saute for 30 seconds.
- Add tomatoes, chicken broth, and rice to pan. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until rice is cooked.
- Add chicken back into the pan and stir to combine.
- Season with salt and sprinkle with chopped parsley before serving.
