Spicy Breakfast Skillet

Ingredients:

  • 2 tablespoons Olive oil
  • 2 cups Diced potatoes
  • 1 cup Bell peppers, diced
  • 1 cup Onion, diced
  • 1 tablespoon Diced jalapenos
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 4 Eggs
  • 1 cup Shredded cheddar cheese

Instructions:

  1. Heat the olive oil in a large non-stick skillet over medium heat.
  2. Add the potatoes, bell peppers, onion, and jalapenos to the skillet. Season with salt and pepper.
  3. Cook the mixture for about 15-20 minutes, until the potatoes are golden brown and crispy.
  4. Create 4 wells in the mixture. Crack an egg into each well, then cover the skillet.
  5. Cook for another 5-7 minutes, until the egg whites are set but the yolks are still runny.
  6. Sprinkle the cheddar cheese over the top of the skillet, then cover again. Allow to sit for a few minutes, until the cheese is melted.
  7. Serve the skillet directly from the pan, with additional salt and pepper if desired.
