
Spicy Breakfast Skillet

Ingredients:
- 2 tablespoons Olive oil
- 2 cups Diced potatoes
- 1 cup Bell peppers, diced
- 1 cup Onion, diced
- 1 tablespoon Diced jalapenos
- 1 teaspoon Salt
- 1 teaspoon Black pepper
- 4 Eggs
- 1 cup Shredded cheddar cheese
Instructions:
- Heat the olive oil in a large non-stick skillet over medium heat.
- Add the potatoes, bell peppers, onion, and jalapenos to the skillet. Season with salt and pepper.
- Cook the mixture for about 15-20 minutes, until the potatoes are golden brown and crispy.
- Create 4 wells in the mixture. Crack an egg into each well, then cover the skillet.
- Cook for another 5-7 minutes, until the egg whites are set but the yolks are still runny.
- Sprinkle the cheddar cheese over the top of the skillet, then cover again. Allow to sit for a few minutes, until the cheese is melted.
- Serve the skillet directly from the pan, with additional salt and pepper if desired.
