Spicy Breakfast Rice Skillet

Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 1 large red bell pepper, diced
  • 2 peppers jalapeno, minced
  • 2 cloves garlic cloves, minced
  • 3 cups cooked rice
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 large eggs
  • to taste hot sauce
  • 1 cup grated cheddar cheese
  • 2 stalks green onions, sliced

Instructions:

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion, red bell pepper, and jalapeno to the skillet and cook for 5 minutes, until the vegetables are softened.
  3. Add the garlic to the skillet and cook for another 30 seconds.
  4. Stir in the cooked rice, salt, and black pepper and cook for another 2-3 minutes, until the rice is heated through.
  5. Make 4 wells in the rice mixture and crack an egg into each well. Cover the skillet and cook for about 4-5 minutes, until the eggs are cooked to your liking.
  6. Drizzle hot sauce over the skillet and sprinkle with grated cheddar cheese.
  7. Cover the skillet again and cook for another 2 minutes, until the cheese is melted.
  8. Sprinkle the skillet with sliced green onions before serving.
