
Spicy Breakfast Rice Skillet

Ingredients:
- 2 tablespoons olive oil
- 1 medium onion, diced
- 1 large red bell pepper, diced
- 2 peppers jalapeno, minced
- 2 cloves garlic cloves, minced
- 3 cups cooked rice
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 4 large eggs
- to taste hot sauce
- 1 cup grated cheddar cheese
- 2 stalks green onions, sliced
Instructions:
- Heat the olive oil in a large skillet over medium heat.
- Add the onion, red bell pepper, and jalapeno to the skillet and cook for 5 minutes, until the vegetables are softened.
- Add the garlic to the skillet and cook for another 30 seconds.
- Stir in the cooked rice, salt, and black pepper and cook for another 2-3 minutes, until the rice is heated through.
- Make 4 wells in the rice mixture and crack an egg into each well. Cover the skillet and cook for about 4-5 minutes, until the eggs are cooked to your liking.
- Drizzle hot sauce over the skillet and sprinkle with grated cheddar cheese.
- Cover the skillet again and cook for another 2 minutes, until the cheese is melted.
- Sprinkle the skillet with sliced green onions before serving.
