
Spicy Breakfast Mac and Cheese

Ingredients:
- 2 cups Elbow macaroni
- 2 tablespoons Butter
- 2 tablespoons All-purpose flour
- 2 cups Milk
- 2 cups Cheddar cheese
- 1/2 cup Parmesan cheese
- 1 teaspoon Paprika
- 1 teaspoon Cayenne pepper
- 4 Eggs
- to taste Salt and black pepper
Instructions:
- Boil the macaroni in a large pot until al dente. Drain and set aside.
- In a saucepan, melt the butter over medium heat. Stir in the flour to create a roux, then gradually whisk in the milk. Bring to a simmer, stirring constantly until thickened.
- Remove the saucepan from heat. Stir in the cheddar cheese, parmesan cheese, paprika, and cayenne pepper until the cheese is fully melted and the sauce is smooth.
- Add the cooked macaroni to the saucepan and stir until well coated. Season with salt and black pepper as per taste.
- In a separate pan, fry the eggs to your liking.
