Spicy Breakfast Mac and Cheese

Ingredients:

  • 2 cups Elbow macaroni
  • 2 tablespoons Butter
  • 2 tablespoons All-purpose flour
  • 2 cups Milk
  • 2 cups Cheddar cheese
  • 1/2 cup Parmesan cheese
  • 1 teaspoon Paprika
  • 1 teaspoon Cayenne pepper
  • 4 Eggs
  • to taste Salt and black pepper

Instructions:

  1. Boil the macaroni in a large pot until al dente. Drain and set aside.
  2. In a saucepan, melt the butter over medium heat. Stir in the flour to create a roux, then gradually whisk in the milk. Bring to a simmer, stirring constantly until thickened.
  3. Remove the saucepan from heat. Stir in the cheddar cheese, parmesan cheese, paprika, and cayenne pepper until the cheese is fully melted and the sauce is smooth.
  4. Add the cooked macaroni to the saucepan and stir until well coated. Season with salt and black pepper as per taste.
  5. In a separate pan, fry the eggs to your liking.
  6. Serve the spicy mac and cheese in bowls, topped with a fried egg. Enjoy your Spicy Breakfast Mac and Cheese!
