Spicy Breakfast Carbonara à la Française

Ingredients:

  • 400 grams Spaghetti
  • 200 grams Bacon
  • 100 grams Parmesan cheese
  • 4 whole Eggs
  • 2 sprigs Fresh parsley
  • 2 whole Garlic cloves
  • 1 whole Red chili pepper
  • To taste Black pepper
  • To taste Salt

Instructions:

  1. First, boil a pot of water with a pinch of salt. Once boiling, add the spaghetti and cook until al dente.
  2. While the spaghetti is cooking, cut the bacon into small pieces and mince the garlic and chili pepper.
  3. Next, in a large pan, sauté the bacon, garlic, and chili pepper until the bacon is crispy.
  4. In a separate bowl, beat the eggs and mix in the grated Parmesan cheese.
  5. Once the spaghetti is cooked, drain it and save a cup of pasta water.
  6. Off the heat, add the hot spaghetti to the pan with the bacon, garlic, and chili, and mix well.
  7. Next, slowly pour the egg and cheese mixture into the pan, stirring constantly to prevent the eggs from scrambling. If the sauce is too thick, add some of the saved pasta water.
  8. Finally, season with black pepper and garnish with fresh parsley to serve.
