
Spicy Beef Skillet Hash

Ingredients:
- 1 pound Ground Beef
- 3 medium Potatoes
- 1 large Bell Pepper
- 1 medium Jalapeno
- 1 medium Onion
- 3 Garlic cloves
- 2 tbsp Olive oil
- 1/2 tsp Paprika
- 1/4 tsp Cayenne Pepper
- to taste Salt
- to taste Black Pepper
- 4 Eggs
Instructions:
- Peel and cut the potatoes into 1/2 inch cubes. Dice the bell pepper, Jalapeno, onion and mince the garlic.
- Heat 1 tablespoon of oil in a large skillet over medium heat. Add the ground beef and cook until browned and no longer pink. Remove from skillet and set aside.
- In the same skillet, add another tablespoon of oil and add the potatoes. Cook until they are golden and crispy.
- Add the bell pepper, onion, Jalapeno, and garlic to the skillet. Stir in the spices (paprika, cayenne pepper, salt, and black pepper) and cook for another 5 minutes, until the vegetables are softened.
- Return the beef to the skillet and mix to combine well.
- Make four wells in the mixture and crack an egg into each. Cover the skillet and let the eggs cook to your preferred doneness. Season the eggs with a bit more salt and pepper before serving.
