Spicy Beef Skillet Hash

Ingredients:

  • 1 pound Ground Beef
  • 3 medium Potatoes
  • 1 large Bell Pepper
  • 1 medium Jalapeno
  • 1 medium Onion
  • 3 Garlic cloves
  • 2 tbsp Olive oil
  • 1/2 tsp Paprika
  • 1/4 tsp Cayenne Pepper
  • to taste Salt
  • to taste Black Pepper
  • 4 Eggs

Instructions:

  1. Peel and cut the potatoes into 1/2 inch cubes. Dice the bell pepper, Jalapeno, onion and mince the garlic.
  2. Heat 1 tablespoon of oil in a large skillet over medium heat. Add the ground beef and cook until browned and no longer pink. Remove from skillet and set aside.
  3. In the same skillet, add another tablespoon of oil and add the potatoes. Cook until they are golden and crispy.
  4. Add the bell pepper, onion, Jalapeno, and garlic to the skillet. Stir in the spices (paprika, cayenne pepper, salt, and black pepper) and cook for another 5 minutes, until the vegetables are softened.
  5. Return the beef to the skillet and mix to combine well.
  6. Make four wells in the mixture and crack an egg into each. Cover the skillet and let the eggs cook to your preferred doneness. Season the eggs with a bit more salt and pepper before serving.
