Spicy Beef Bourguignon

Ingredients:

  • 6 slices Bacon
  • 2.5 pounds Beef Chuck Roast
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 large Onion
  • 4 cloves Garlic
  • 3 Carrots
  • 6 Fresh Thyme Sprigs
  • 1 handful Fresh Parsley
  • 2 cups Red Wine
  • 2 cups Beef Stock
  • 2 Bay Leaves
  • 3 tablespoons All-purpose Flour
  • 1 teaspoon Cayenne Pepper

Instructions:

  1. In a large dutch oven, sauté the bacon on medium heat until crisp and fat is rendered.
  2. Remove bacon and set aside.
  3. Season the beef with salt, pepper and cayenne pepper. Add beef to the pan with the bacon grease and sear on all sides until browned. Do not overcrowd the pan, you may need to do this in batches.
  4. Remove beef and set aside.
  5. In the same pan, add onions, garlic and carrots and sauté until softened.
  6. Stir in flour until the vegetables are coated.
  7. Add the wine, scraping the bottom of the pan to loosen the browned bits.
  8. Return beef and bacon back to the pan. Add the beef stock, thyme, parsley and bay leaves.
  9. Cover and simmer over low heat for 2-3 hours, until the beef is tender.
  10. Remove the bay leaves and thyme stems before serving. Serve it hot.
