Spicy BBQ Pulled Pork Sandwich

Ingredients:

  • 2 lb Pork Shoulder
  • 1 cup BBQ Sauce
  • 1/2 cup Brown Sugar
  • 1/2 cup Apple Cider Vinegar
  • 1 tbsp Chili Powder
  • 1/2 tsp Cayenne Pepper
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Garlic Powder
  • 4 items Sandwich Buns
  • 1 bag Coleslaw Mix
  • 1/2 cup Mayonnaise

Instructions:

  1. In a small bowl, mix brown sugar, chili powder, cayenne pepper, salt, black pepper, and garlic powder.
  2. Rub the seasoning mix over the pork shoulder, ensuring it's evenly coated.
  3. Place pork shoulder in the slow cooker.
  4. In another bowl, mix BBQ sauce and apple cider vinegar. Pour the mixture over the pork shoulder in the slow cooker.
  5. Cover the slow cooker and cook on low for 6 hours or until the pork is tender and can easily be shredded with a fork.
  6. While pork is cooking, prepare the coleslaw. In a large bowl, mix coleslaw mix and mayonnaise until well combined. Refrigerate until ready to use.
  7. Once the pork is done, shred it using two forks and mix it with the sauce remaining in the slow cooker.
  8. To serve, place a generous portion of pulled pork on a bun, top with coleslaw, and place the other half of the bun on top.
