Spicy Apple Duck Confit

Ingredients:
- 4 unit Duck Legs
- To taste Salt
- To taste Pepper
- 2 Tablespoons Apple Cider Vinegar
- 1 Teaspoon Cayenne Pepper
- 2 unit Large Apples
- 2 Sprigs Fresh Thyme
- 2 unit Garlic cloves
- 1 unit Red Onion
- 500 Grams Duck Fat
Instructions:
- 1. Preheat your oven to 275F/135C.
- 2. Rub the duck legs with salt, pepper, and cayenne.
- 3. Place the duck on a roasting tray, skin side down, and roast for 1 hour.
- 4. In the meantime, peel and core the apples, then slice them into thick segments. Chop the red onion and garlic cloves too.
- 5. After the duck has roasted for an hour, add the apple segments, thyme, garlic, red onion, and duck fat to the roasting tray. Return to the oven and roast for another 3 hours.
- 6. Baste the duck with the pan juices every hour.
- 7. After 4 hours, increase the oven temperature to 400F/200C and roast for another half an hour, until the duck skin is crispy and apples are caramelized.
- 8. Let the dish rest for a few minutes before serving.
