Spicy American Jambalaya

Ingredients:

  • 1 cup Long Grain White Rice
  • 2 tablespoons Olive Oil
  • 1 large Onion
  • 2 medium Bell Peppers
  • 3 Garlic Cloves
  • 2 teaspoons Cajun Seasoning
  • 1/2 lb Andouille Sausage
  • 2 medium Chicken Breasts
  • to taste Hot Sauce
  • to taste Salt
  • to taste Black Pepper
  • 1 can Canned Diced Tomatoes
  • 2 cups Chicken Broth
  • 1/2 lb Shrimp
  • 1/4 cup Parsley

Instructions:

  1. Heat oil in a large pot over medium-high heat. Add sausage and chicken, and cook until browned. Remove from pot and set aside.
  2. Add onion, peppers, and garlic to pot and cook until vegetables are soft.
  3. Add uncooked rice, Cajun seasoning, salt, pepper, hot sauce, diced tomatoes, and chicken broth to the pot. Stir well and bring to a boil.
  4. Reduce heat to medium-low, cover, and simmer for 15-20 minutes, until rice is cooked.
  5. Stir in shrimp, sausage, and chicken, and cook for a few more minutes until shrimp is pink.
  6. Serve hot, garnished with chopped parsley.
