
Spicy American Jambalaya

Ingredients:
- 1 cup Long Grain White Rice
- 2 tablespoons Olive Oil
- 1 large Onion
- 2 medium Bell Peppers
- 3 Garlic Cloves
- 2 teaspoons Cajun Seasoning
- 1/2 lb Andouille Sausage
- 2 medium Chicken Breasts
- to taste Hot Sauce
- to taste Salt
- to taste Black Pepper
- 1 can Canned Diced Tomatoes
- 2 cups Chicken Broth
- 1/2 lb Shrimp
- 1/4 cup Parsley
Instructions:
- Heat oil in a large pot over medium-high heat. Add sausage and chicken, and cook until browned. Remove from pot and set aside.
- Add onion, peppers, and garlic to pot and cook until vegetables are soft.
- Add uncooked rice, Cajun seasoning, salt, pepper, hot sauce, diced tomatoes, and chicken broth to the pot. Stir well and bring to a boil.
- Reduce heat to medium-low, cover, and simmer for 15-20 minutes, until rice is cooked.
- Stir in shrimp, sausage, and chicken, and cook for a few more minutes until shrimp is pink.
- Serve hot, garnished with chopped parsley.
