Spiced Pork Curry

Ingredients:
- 2 pounds Pork shoulder
- 2 medium sized Onions
- 4 cloves Garlic
- 3 medium sized Tomatoes
- 15 pieces Curry leaves
- 2 inch piece Ginger
- 1 teaspoon Turmeric powder
- 2 teaspoon Coriander powder
- 2 teaspoon Chili powder
- 1 teaspoon Garam masala
- to taste Salt
- 3 tablespoon Oil
- 2 cups Water
Instructions:
- Cut the pork into bite-sized pieces. Fine chop the onions, garlic, ginger and tomatoes.
- In a large pan, heat the oil over medium heat. Add the curry leaves and saute for a few seconds.
- Add the onions and saute for about 5 minutes, until golden brown. Add the garlic and ginger, sauteing for another 2 minutes.
- Add the pork pieces to the pan, stirring to mix well with the sauteed onions and spices. Let it cook for about 10 minutes, until it is no longer pink.
- Add the chopped tomatoes, turmeric powder, coriander powder, chili powder, garam masala and salt to the pan. Stir well to combine all the ingredients.
- Add the water to the pan, reduce the heat to low, cover the pan and let it simmer for about 45 minutes, until the pork is cooked through and the flavors have melded together.
- Serve hot over cooked rice or with naan bread.
