Spiced Pork Breakfast Curry

Ingredients:

  • 500 grams Pork tenderloin
  • 1 tablespoon Ginger garlic paste
  • 1 tablespoon Indian garam masala
  • 1/2 teaspoon Turmeric
  • 1/2 teaspoon Red chili powder
  • 1/2 teaspoon Cumin seeds
  • 2 tablespoons Canola oil
  • 2 medium Onions, finely chopped
  • 2 medium Tomatoes, finely chopped
  • 1 pinch Salt, to taste
  • A handful ⁠— Fresh cilantro, for garnish

Instructions:

  1. 1. Cut the pork into small cubes and marinate it with ginger garlic paste, garam masala, turmeric, red chili powder and salt. Keep it aside for 15 minutes.
  2. 2. Heat oil in a pan, add cumin seeds and let them splutter. Then add chopped onions and saute until golden brown.
  3. 3. Add the marinated pork and cook on medium heat for around 10 minutes, until it's browned on all sides.
  4. 4. Add the chopped tomatoes and cook for another 10-15 minutes, until the tomatoes become soft and begin to meld with the pork.
  5. 5. Cover the pan and let it simmer on low heat for 15 minutes or until the pork is tender and the flavors are well combined.
  6. 6. Garnish with fresh cilantro and serve hot with Indian bread or steamed rice.
