
Spiced Pork Breakfast Curry

Ingredients:
- 500 grams Pork tenderloin
- 1 tablespoon Ginger garlic paste
- 1 tablespoon Indian garam masala
- 1/2 teaspoon Turmeric
- 1/2 teaspoon Red chili powder
- 1/2 teaspoon Cumin seeds
- 2 tablespoons Canola oil
- 2 medium Onions, finely chopped
- 2 medium Tomatoes, finely chopped
- 1 pinch Salt, to taste
- A handful — Fresh cilantro, for garnish
Instructions:
- 1. Cut the pork into small cubes and marinate it with ginger garlic paste, garam masala, turmeric, red chili powder and salt. Keep it aside for 15 minutes.
- 2. Heat oil in a pan, add cumin seeds and let them splutter. Then add chopped onions and saute until golden brown.
- 3. Add the marinated pork and cook on medium heat for around 10 minutes, until it's browned on all sides.
- 4. Add the chopped tomatoes and cook for another 10-15 minutes, until the tomatoes become soft and begin to meld with the pork.
- 5. Cover the pan and let it simmer on low heat for 15 minutes or until the pork is tender and the flavors are well combined.
- 6. Garnish with fresh cilantro and serve hot with Indian bread or steamed rice.
