
Spiced Indian Fruit Curry

Ingredients:
- 3 cups cubed Assorted Fruits (apples, pears, bananas, grapes)
- 2 tsp Curry Powder
- 1 tsp Turmeric
- 1 tsp Cumin Seeds
- 2 tbsp Vegetable oil
- 1 medium, chopped Onion
- 2 minced Garlic Cloves
- 1 tbsp, grated Ginger
- 2 medium, chopped Tomatoes
- 1 can Coconut milk
- to taste Salt
- handful chopped Fresh Coriander leaves
Instructions:
- Start by preparing the fruit. Wash and cut into bite-sized cubes. Set aside.
- In a large pan, heat the vegetable oil over medium heat. Add the cumin seeds and allow them to sizzle for few seconds.
- Add the chopped onion to the pan and sauté until they begin to turn golden brown.
- Next, add the garlic and ginger to the pan and fry for another minute.
- Add the chopped tomatoes to the pan, stirring well to combine with the other ingredients. Cook until the tomatoes are soft.
- Sprinkle the curry powder and turmeric over the mixture in the pan and stir well to combine. Cook for another minute to let the spices mix well.
- Add the prepared fruit to the pan, folding them gently into the spicy onion mixture. Make sure all the fruit pieces are well coated with the spice mix.
- Pour the coconut milk into the pan and stir gently to combine. Allow the mixture to come to a gentle simmer.
- Lower the heat and let the curry cook for about 15-20 minutes, until the fruit is tender and the flavors have melded together.
- Add salt to taste and garnish with the freshly chopped coriander before serving.
