
Southern Rice and Shrimp

Ingredients:
- 1 cup white rice
- 2 cups water
- 1 lb large shrimp
- 2 tbsps olive oil
- 1 chopped onion
- 1 chopped green bell pepper
- 2 minced garlic cloves
- 1 can of diced tomatoes
- to taste spices (cayenne pepper, thyme, black pepper, salt)
Instructions:
- In a large pot, bring the rice and water to a boil. Reduce heat to low, cover, and simmer for 20 minutes.
- In a large skillet, heat the olive oil over medium heat. Cook and stir the onion, pepper, and garlic in oil until tender.
- Mix in the canned tomatoes, and continue cooking 10 minutes, or until tomatoes are heated through.
- Stir in the shrimp, and cook 5 minutes, or until shrimp are pink.
- Serve the shrimp mixture over the cooked rice.
