Southern Rice and Shrimp

Ingredients:

  • 1 cup white rice
  • 2 cups water
  • 1 lb large shrimp
  • 2 tbsps olive oil
  • 1 chopped onion
  • 1 chopped green bell pepper
  • 2 minced garlic cloves
  • 1 can of diced tomatoes
  • to taste spices (cayenne pepper, thyme, black pepper, salt)

Instructions:

  1. In a large pot, bring the rice and water to a boil. Reduce heat to low, cover, and simmer for 20 minutes.
  2. In a large skillet, heat the olive oil over medium heat. Cook and stir the onion, pepper, and garlic in oil until tender.
  3. Mix in the canned tomatoes, and continue cooking 10 minutes, or until tomatoes are heated through.
  4. Stir in the shrimp, and cook 5 minutes, or until shrimp are pink.
  5. Serve the shrimp mixture over the cooked rice.
