Sole Meunière with Exotic Fruits

Ingredients:

  • 2 fish Dover Sole
  • 1 cup flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 tablespoons butter
  • 2 tablespoons olive oil
  • 1 whole lemon, juiced lemon
  • 2 tablespoons Freshly chopped flat-leaf parsley
  • 2 cups, diced Exotic fruits (like dragon fruit, star fruit, passion fruit, etc.)

Instructions:

  1. Dust the fish with salt, pepper, and flour on both sides.
  2. Heat a sauté pan over medium-high heat and melt the butter and olive oil. Once the butter has melted and the oil is hot, add the fish.
  3. Cook the fish for about 3 minutes on one side, until it is well browned, then flip and cook the other side for a similar amount of time. Remove the fish once cooked and set aside on a plate.
  4. In the same pan, deglaze with lemon juice, scraping up any bits from the bottom. Add a lug of olive oil, and let it reduce slightly for about a minute.
  5. At the last moment, fold in the diced exotic fruits and cook for another 2 minutes.
  6. Pour this sauce over the fish, garnish with chopped parsley and serve immediately, ideally with some good crusty bread to soak up the sauce.
