
Sole Meunière with Exotic Fruits

Ingredients:
- 2 fish Dover Sole
- 1 cup flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 tablespoons butter
- 2 tablespoons olive oil
- 1 whole lemon, juiced lemon
- 2 tablespoons Freshly chopped flat-leaf parsley
- 2 cups, diced Exotic fruits (like dragon fruit, star fruit, passion fruit, etc.)
Instructions:
- Dust the fish with salt, pepper, and flour on both sides.
- Heat a sauté pan over medium-high heat and melt the butter and olive oil. Once the butter has melted and the oil is hot, add the fish.
- Cook the fish for about 3 minutes on one side, until it is well browned, then flip and cook the other side for a similar amount of time. Remove the fish once cooked and set aside on a plate.
- In the same pan, deglaze with lemon juice, scraping up any bits from the bottom. Add a lug of olive oil, and let it reduce slightly for about a minute.
- At the last moment, fold in the diced exotic fruits and cook for another 2 minutes.
- Pour this sauce over the fish, garnish with chopped parsley and serve immediately, ideally with some good crusty bread to soak up the sauce.
