
Simple French Ratatouille

Ingredients:
- 2 Tablespoons Olive oil
- 1 Whole Onion, chopped
- 2 Cloves Garlic cloves, minced
- 1 Cup Eggplant, cubed
- 1 Cup Zucchini, cubed
- 1 Whole Bell Pepper, chopped
- 2 Whole Tomatoes, chopped
- 1 Teaspoon Dried herbs de Provence
- To taste Salt and pepper
Instructions:
- 1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, cook until they start to soften.
- 2. Add the eggplant, zucchini, bell pepper, and tomatoes. Stir in the herbs de Provence. Season with salt and pepper.
- 3. Cover and cook for 15 to 20 minutes, stirring occasionally, until the vegetables are tender.
- 4. Serve warm as a side dish, or cool for a flavorful addition to salads.
