Simple French Ratatouille

Ingredients:

  • 2 Tablespoons Olive oil
  • 1 Whole Onion, chopped
  • 2 Cloves Garlic cloves, minced
  • 1 Cup Eggplant, cubed
  • 1 Cup Zucchini, cubed
  • 1 Whole Bell Pepper, chopped
  • 2 Whole Tomatoes, chopped
  • 1 Teaspoon Dried herbs de Provence
  • To taste Salt and pepper

Instructions:

  1. 1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, cook until they start to soften.
  2. 2. Add the eggplant, zucchini, bell pepper, and tomatoes. Stir in the herbs de Provence. Season with salt and pepper.
  3. 3. Cover and cook for 15 to 20 minutes, stirring occasionally, until the vegetables are tender.
  4. 4. Serve warm as a side dish, or cool for a flavorful addition to salads.
