Sicilian Swordfish

Ingredients:

  • 4 pieces Swordfish steaks
  • to taste Sea salt
  • to taste Black pepper
  • 3 cloves Garlic
  • 2 tablespoons Extra virgin olive oil
  • 1 cup Dry white wine
  • 1 cup Tomato passata
  • 1 tablespoon Capers
  • handful Black olives
  • 1 Fresh lemon

Instructions:

  1. Season the swordfish steaks with sea salt and black pepper on both sides.
  2. Peel and finely chop the garlic cloves.
  3. Heat the olive oil in a large skillet over medium-high heat.
  4. Add the swordfish steaks to the skillet and cook for about 3 minutes on each side, until golden brown. Remove from the skillet and set aside.
  5. In the same skillet, add the chopped garlic and cook until fragrant.
  6. Add the dry white wine to the skillet, scraping the bottom to deglaze. Allow the wine to reduce by half.
  7. Add the tomato passata, capers, and olives to the skillet. Stir well and let simmer for a few minutes.
  8. Add the swordfish back into the skillet and simmer for another 5-7 minutes, until the fish is cooked through and the flavors have blended together.
  9. Slice the lemon and squeeze the juice over the swordfish just before serving. Enjoy your Sicilian Swordfish!
