Seafood Frittata

Ingredients:

  • 6 pieces Organic eggs
  • 300 grams Mixed seafood
  • 2 tablespoons Olive oil
  • 1 medium size Yellow Onion
  • 2 pieces Garlic cloves
  • 1 teaspoon Salt
  • 1/2 teaspoon Cracked black pepper
  • 1 sprig Fresh parsley
  • 100 grams Low-fat mozzarella cheese

Instructions:

  1. Preheat the oven to 180°C. Chop the onion, garlic, and parsley finely.
  2. In a mixing bowl, whisk 6 organic eggs.
  3. In a large oven-resistant pan, heat the olive oil over medium heat. Saute the onion and garlic until they start getting color.
  4. Add the mixed seafood, salt, and pepper to the pan. When the seafood is nearly cooked, mix in the whisked eggs.
  5. Grate the mozzarella cheese and sprinkle it evenly over the top of the egg mixture. Cook for about 2 minutes until the edges start to set, then put the pan in the preheated oven.
  6. Bake for 15-20 minutes until golden and fully set. Top off with the chopped parsley, let it cool for a few minutes, and then cut into slices to serve.
