
Seafood Frittata

Ingredients:
- 6 pieces Organic eggs
- 300 grams Mixed seafood
- 2 tablespoons Olive oil
- 1 medium size Yellow Onion
- 2 pieces Garlic cloves
- 1 teaspoon Salt
- 1/2 teaspoon Cracked black pepper
- 1 sprig Fresh parsley
- 100 grams Low-fat mozzarella cheese
Instructions:
- Preheat the oven to 180°C. Chop the onion, garlic, and parsley finely.
- In a mixing bowl, whisk 6 organic eggs.
- In a large oven-resistant pan, heat the olive oil over medium heat. Saute the onion and garlic until they start getting color.
- Add the mixed seafood, salt, and pepper to the pan. When the seafood is nearly cooked, mix in the whisked eggs.
- Grate the mozzarella cheese and sprinkle it evenly over the top of the egg mixture. Cook for about 2 minutes until the edges start to set, then put the pan in the preheated oven.
- Bake for 15-20 minutes until golden and fully set. Top off with the chopped parsley, let it cool for a few minutes, and then cut into slices to serve.
