Savory Provencal Rice Breakfast Porridge

Ingredients:

  • 1 cup Arborio Rice
  • 1 tablespoon Olive Oil
  • 1 small, chopped Yellow Onion
  • 2 minced Garlic cloves
  • 3 cups Chicken Broth
  • 1 teaspoon Salt
  • 1 sprig Fresh thyme
  • 1/2 cup, grated Gruyere cheese
  • 2 Poached eggs

Instructions:

  1. Heat the olive oil in a pot over medium heat. Add the chopped onion and sauté until it becomes transparent.
  2. Add the minced garlic and sauté for another minute until fragrant.
  3. Stir in the rice and toast for about 5 minutes, stirring frequently.
  4. Slowly add the chicken broth, one cup at a time, letting the rice absorb the broth before adding the next cup. This should take about 20-25 minutes.
  5. Stir in the salt and thyme, and remove the pot from heat.
  6. Cover the pot and let it sit for 5 minutes to allow the rice to continue absorbing the broth.
  7. Stir in the grated Gruyere cheese until melted and well incorporated.
  8. Serve the rice in two bowls, topping each with a poached egg.
