
Savory Provencal Rice Breakfast Porridge

Ingredients:
- 1 cup Arborio Rice
- 1 tablespoon Olive Oil
- 1 small, chopped Yellow Onion
- 2 minced Garlic cloves
- 3 cups Chicken Broth
- 1 teaspoon Salt
- 1 sprig Fresh thyme
- 1/2 cup, grated Gruyere cheese
- 2 Poached eggs
Instructions:
- Heat the olive oil in a pot over medium heat. Add the chopped onion and sauté until it becomes transparent.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the rice and toast for about 5 minutes, stirring frequently.
- Slowly add the chicken broth, one cup at a time, letting the rice absorb the broth before adding the next cup. This should take about 20-25 minutes.
- Stir in the salt and thyme, and remove the pot from heat.
- Cover the pot and let it sit for 5 minutes to allow the rice to continue absorbing the broth.
- Stir in the grated Gruyere cheese until melted and well incorporated.
- Serve the rice in two bowls, topping each with a poached egg.
