Roasted Veggie Midnight Bruschetta

Ingredients:

  • 1 cup Cherry Tomatoes
  • 1 medium-sized Zucchini
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic
  • to taste Salt
  • to taste Black Pepper
  • 1 small-sized Italian Bread loaf
  • to taste Parmesan Cheese

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. Dice the zucchini and cherry tomatoes into small chunks.
  3. In a bowl, mix the veggies with olive oil, minced garlic, salt, and black pepper.
  4. Spread out the vegetables on a baking tray and roast them in the preheated oven for about 20 minutes, or until they are softened and slightly caramelized.
  5. While the veggies are roasting, slice the bread loaf into thick slices and toast them on a griddle or toaster until golden brown.
  6. Once the vegetables are done, scoop them onto the toasted bread slices.
  7. Finally, sprinkle some grated Parmesan cheese over the top of the vegetables for an extra touch of flavor.
