
Roasted Veggie Midnight Bruschetta

Ingredients:
- 1 cup Cherry Tomatoes
- 1 medium-sized Zucchini
- 2 tablespoons Olive Oil
- 2 cloves Garlic
- to taste Salt
- to taste Black Pepper
- 1 small-sized Italian Bread loaf
- to taste Parmesan Cheese
Instructions:
- Preheat your oven to 425°F (220°C).
- Dice the zucchini and cherry tomatoes into small chunks.
- In a bowl, mix the veggies with olive oil, minced garlic, salt, and black pepper.
- Spread out the vegetables on a baking tray and roast them in the preheated oven for about 20 minutes, or until they are softened and slightly caramelized.
- While the veggies are roasting, slice the bread loaf into thick slices and toast them on a griddle or toaster until golden brown.
