
Roasted Vegetable Quinoa Salad

Ingredients:
- 1 cup Quinoa
- 4 cups Mixed vegetables (carrots, bell peppers, zucchini, etc.)
- 2 tbsp Olive oil
- 2 cloves Garlic
- to taste Salt
- to taste Pepper
- 1/2 cup Feta cheese
- 1 tbsp Fresh lemon juice
Instructions:
- Preheat the oven to 400 degrees Fahrenheit.
- While the oven is heating, cook the quinoa according to the package instructions.
- Place the mixed vegetables on a baking sheet. Drizzle with olive oil, minced garlic, salt and pepper. Toss to coat.
- Roast the vegetables in the oven for 15-20 minutes, until they are tender and lightly browned.
- In a large bowl, combine the cooked quinoa and roasted vegetables.
- Add the feta cheese and fresh lemon juice. Stir to combine.
- Season with additional salt and pepper if needed.
- Serve the salad warm or at room temperature.
