Roasted Vegetable Quinoa Salad

Ingredients:

  • 1 cup Quinoa
  • 4 cups Mixed vegetables (carrots, bell peppers, zucchini, etc.)
  • 2 tbsp Olive oil
  • 2 cloves Garlic
  • to taste Salt
  • to taste Pepper
  • 1/2 cup Feta cheese
  • 1 tbsp Fresh lemon juice

Instructions:

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. While the oven is heating, cook the quinoa according to the package instructions.
  3. Place the mixed vegetables on a baking sheet. Drizzle with olive oil, minced garlic, salt and pepper. Toss to coat.
  4. Roast the vegetables in the oven for 15-20 minutes, until they are tender and lightly browned.
  5. In a large bowl, combine the cooked quinoa and roasted vegetables.
  6. Add the feta cheese and fresh lemon juice. Stir to combine.
  7. Season with additional salt and pepper if needed.
  8. Serve the salad warm or at room temperature.
