Roasted Mediterranean Vegetables

Ingredients:

  • 1 whole eggplant
  • 1 whole zucchini
  • 1 whole red bell pepper
  • 3 medium tomatoes
  • 2 tbsp olive oil
  • 1 tbsp dried oregano
  • to taste pinch salt
  • to taste pinch pepper
  • 1/2 cup feta cheese
  • handful chopped fresh basil

Instructions:

  1. Preheat your oven to 200 degrees Celsius (392 degrees Fahrenheit).
  2. Chop the eggplant, zucchini, red bell pepper, and tomatoes into bite size pieces.
  3. Spread the chopped vegetables out on a baking tray.
  4. Sprinkle the vegetables with the olive oil, oregano, salt, and pepper.
  5. Roast the vegetables in the oven for 30 minutes, or until they are softened and slightly charred.
  6. Once the vegetables are cooked, sprinkle them with the feta cheese and fresh basil.
  7. Serve the roasted Mediterranean vegetables hot.
