
Roasted Mediterranean Vegetables

Ingredients:
- 1 whole eggplant
- 1 whole zucchini
- 1 whole red bell pepper
- 3 medium tomatoes
- 2 tbsp olive oil
- 1 tbsp dried oregano
- to taste pinch salt
- to taste pinch pepper
- 1/2 cup feta cheese
- handful chopped fresh basil
Instructions:
- Preheat your oven to 200 degrees Celsius (392 degrees Fahrenheit).
- Chop the eggplant, zucchini, red bell pepper, and tomatoes into bite size pieces.
- Spread the chopped vegetables out on a baking tray.
- Sprinkle the vegetables with the olive oil, oregano, salt, and pepper.
- Roast the vegetables in the oven for 30 minutes, or until they are softened and slightly charred.
- Once the vegetables are cooked, sprinkle them with the feta cheese and fresh basil.
- Serve the roasted Mediterranean vegetables hot.
