Roasted Chicken with Quinoa and Steamed Vegetables

Ingredients:

  • 1 piece Whole chicken
  • 2 cups Quinoa
  • 4 cups Mixed vegetables (broccoli, carrots, bell peppers)
  • 2 tablespoons Olive oil
  • to taste Salt and pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika

Instructions:

  1. 1. Preheat oven to 375°F (190°C).
  2. 2. Season the whole chicken with salt, pepper, garlic powder, and paprika.
  3. 3. Place the chicken in a roasting pan and drizzle with olive oil.
  4. 4. Roast the chicken in the preheated oven for 45 minutes, or until the chicken is cooked through and the skin is crispy.
  5. 5. While the chicken is roasting, cook the quinoa according to the package instructions.
  6. 6. Steam the mixed vegetables in a steamer or boil them in lightly salted water until they are tender.
  7. 7. When the chicken is ready, remove it from the oven and let it rest for 10 minutes before carving.
  8. 8. Serve the roasted chicken with quinoa and steamed vegetables on the side. Enjoy!
