
Roasted Chicken with Quinoa and Steamed Vegetables

Ingredients:
- 1 piece Whole chicken
- 2 cups Quinoa
- 4 cups Mixed vegetables (broccoli, carrots, bell peppers)
- 2 tablespoons Olive oil
- to taste Salt and pepper
- 1 teaspoon Garlic powder
- 1 teaspoon Paprika
Instructions:
- 1. Preheat oven to 375°F (190°C).
- 2. Season the whole chicken with salt, pepper, garlic powder, and paprika.
- 3. Place the chicken in a roasting pan and drizzle with olive oil.
- 4. Roast the chicken in the preheated oven for 45 minutes, or until the chicken is cooked through and the skin is crispy.
- 5. While the chicken is roasting, cook the quinoa according to the package instructions.
- 6. Steam the mixed vegetables in a steamer or boil them in lightly salted water until they are tender.
- 7. When the chicken is ready, remove it from the oven and let it rest for 10 minutes before carving.
- 8. Serve the roasted chicken with quinoa and steamed vegetables on the side. Enjoy!
