Quinoa Ratatouille

Ingredients:

  • 1 cup quinoa
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 1 medium onion
  • 2 medium bell peppers
  • 1 medium zucchini
  • 1 small eggplant
  • 5 medium tomatoes
  • 1/4 cup fresh basil
  • to taste salt and pepper

Instructions:

  1. Rinse the quinoa under cold water. In a medium saucepan, bring 2 cups of salted water to a boil. Add the quinoa and cook until the quinoa is tender, about 15 minutes. Drain well.
  2. In a large saucepan, heat the olive oil over medium heat. Add the garlic and onion, cook until fragrant and softened. Stir in the bell peppers, zucchini, and eggplant. Sauté for about 5 minutes, until they begin to soften.
  3. Add the tomatoes and basil, season with salt and pepper. Lower the heat and simmer for about 20 minutes, until the vegetables are soft and the flavors have melded together.
  4. Serve the ratatouille over the quinoa. Enjoy!
