
Quinoa Ratatouille

Ingredients:
- 1 cup quinoa
- 2 tablespoons olive oil
- 2 cloves garlic
- 1 medium onion
- 2 medium bell peppers
- 1 medium zucchini
- 1 small eggplant
- 5 medium tomatoes
- 1/4 cup fresh basil
- to taste salt and pepper
Instructions:
- Rinse the quinoa under cold water. In a medium saucepan, bring 2 cups of salted water to a boil. Add the quinoa and cook until the quinoa is tender, about 15 minutes. Drain well.
- In a large saucepan, heat the olive oil over medium heat. Add the garlic and onion, cook until fragrant and softened. Stir in the bell peppers, zucchini, and eggplant. Sauté for about 5 minutes, until they begin to soften.
- Add the tomatoes and basil, season with salt and pepper. Lower the heat and simmer for about 20 minutes, until the vegetables are soft and the flavors have melded together.
- Serve the ratatouille over the quinoa. Enjoy!
