Quick Veggie Stir-Fry Udon

Ingredients:

  • 200 grams Udon noodles
  • 2 cups Mixed vegetables (carrots, bell peppers, broccoli)
  • 2 tablespoons Soy sauce
  • 1 tablespoons Sesame oil
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, grated

Instructions:

  1. Prepare the udon noodles according to the packaging instructions.
  2. In a large frying pan or wok, heat the sesame oil over medium heat.
  3. Add the minced garlic and grated ginger, and sauté for 1-2 minutes until fragrant.
  4. Add the mixed vegetables to the pan, and stir-fry for 5-7 minutes until the vegetables are tender.
  5. Add the cooked udon noodles to the pan, and pour the soy sauce over top.
  6. Mix everything together, stirring well to combine.
  7. Cook for another 2-3 minutes until everything is heated through and well combined.
  8. Serve the stir-fry hot, and enjoy your delicious and quick Japanese meal!
