Quick Vegetarian Ratatouille

Ingredients:

  • 2 tablespoons Olive oil
  • 2 medium-sized Onions, thinly sliced
  • 2 medium-sized Bell peppers, sliced
  • 3 Garlic cloves, minced
  • 1 large Eggplant, cubed
  • 2 medium-sized Zucchini, sliced into half circles
  • 4 medium-sized Tomatoes, diced
  • 1/2 cup Fresh basil, chopped
  • to taste Salt and pepper

Instructions:

  1. Heat the olive oil in a large skillet or Dutch oven over medium heat.
  2. Add the onions, bell peppers, and garlic to the pan, sautéing until they begin to soften - about 5 minutes.
  3. Add the eggplant, zucchini, and tomatoes to the pan, stirring to combine well with the other ingredients.
  4. Cover the pan and let the mixture simmer over medium heat for 15-20 minutes, or until the vegetables are cooked through.
  5. Just before serving, stir in the chopped basil and season with salt and pepper to taste.
  6. Serve warm, either on its own or over a bed of couscous or rice for a heartier meal.
