
Quick Vegetarian Ratatouille

Ingredients:
- 2 tablespoons Olive oil
- 2 medium-sized Onions, thinly sliced
- 2 medium-sized Bell peppers, sliced
- 3 Garlic cloves, minced
- 1 large Eggplant, cubed
- 2 medium-sized Zucchini, sliced into half circles
- 4 medium-sized Tomatoes, diced
- 1/2 cup Fresh basil, chopped
- to taste Salt and pepper
Instructions:
- Heat the olive oil in a large skillet or Dutch oven over medium heat.
- Add the onions, bell peppers, and garlic to the pan, sautéing until they begin to soften - about 5 minutes.
- Add the eggplant, zucchini, and tomatoes to the pan, stirring to combine well with the other ingredients.
- Cover the pan and let the mixture simmer over medium heat for 15-20 minutes, or until the vegetables are cooked through.
- Just before serving, stir in the chopped basil and season with salt and pepper to taste.
- Serve warm, either on its own or over a bed of couscous or rice for a heartier meal.
